I needed a quick dinner last night and of course, I still had and have cheese on hand. I had also picked up a loaf of French Brioche (yum) and thought to myself: “yes, grilled cheese”! Now, when it comes to a grilled cheese, I again play around with different tastes and good melting cheeses. Last night I went with a Muenster cheese and Havarti. I couldn’t go with just one and I wanted to balance it out a bit.
Normally, I would shred both cheeses and blend with Dijon mustard then spread onto the brioche. Last night I just cut slabs and threw the Muenster on one side and the other side for the Havarti, I did a light layer Dijon mustard. I also did spread butter on the two outer breads; I wasn’t heavy-handed with the butter since the Brioche is pretty rich in my opinion already.
Oh it was so good – there was a lot oozing out *ahem* because as I said, I threw on slabs LOL so I did just pull that melted goodness off and eat it. Muenster gives you that long melted cheesiness like you see on pizza blended in with mozzarella …. that’s soooo good! Gosh, I love cheese. I think you can tell.
