Growing up in southern California you would think that naturally I had made homemade cheese enchiladas! But I hadn’t until this past weekend and all I could think was WHY?! They are so easy to make and like most things homemade, taste much better then when eating out. This is such an easy meal to put together that the whole family will enjoy and would also be great to bring to your next potluck! Enjoy!
You will need:
Cheddar Cheese – grate a couple handfuls
Cotija cheese – to sprinkle over the top
Enchilada Sauce – 15 oz. can
Spanish rice – we love the Del Real brand found in the meat section. We just add a little water to the bottom of the pan and heat on the stovetop.
Add a scoop or two of enchilada sauce at the bottom of a cooking dish. Make sure to spread it around.
Steam the tortillas for a few minute until soft enough to fold over. Place on a plate and add the cheddar cheese down the middle. Fold both side over like a little burrito and place in a dish.
Spread the rest of the enchilada sauce across the top of the enchiladas. Sprinkle a handful of cheddar cheese across the top. Add some of the Cotija cheese as well.
Place in the oven, uncovered for 35 minutes on 350 degrees Fahrenheit. Take out of the oven and serve yourself up! We added some yummy vegetarian refried beans and that Spanish rice I mentioned above and voila – dinner is served.
